Post Thanksgiving Break Blues

Thanksgiving is over, the countdown to Christmas has started. The break did not seem nearly long enough, though it was ten days long! Gregory and I spent our holiday break at his house in Pittsburgh. We also celebrated our two year anniversary while we were there. We went to a nice restaurant on the top of Mt. Washington and enjoyed a seafood dinner while looking out over the city and Heinz Field (EW! I hate the Steelers! 🙂 ) I really enjoyed spending time with all of his family, especially his younger sisters and parents. They are such a giving family and I am so thankful for how much they include me in!

Exciting things happened this past week– after two years of dating, our parents finally met! My mom came to the Weimer’s house for Thanksgiving and it went really well, as expected of course! I think they both really enjoyed each other’s company and I’m looking forward to when they meet again. 

Only three short weeks until I get to go home for my last break of undergrad! I will be home in Salisbury, living at home, for the LAST TIME in December! It’s crazy. Less than four years ago, I would have never pictured my life to turn out how it has. I will be moving to Pittsburgh in the middle of May to start my three-year DPT program at Pitt! I’m so lucky!!

Time to stop procrastinating and get some real work done!

Let’s try this again..

This week has been very exciting! I found out that I got into University of Pittsburgh, the #2 ranked Physical Therapy school in the country, and I couldn’t be more thankful. I know that this is what I am supposed to do; it has always been my top choice and to think it’s a reality is crazy! Needless to say, after receiving this news I have been on cloud 9 ever since. I would love to keep up with this blog, but I’m sure it won’t last long…

Only four short days from now I will start my much needed week long Thanksgiving break. I will be spending the break in Pittsburgh with the Weimers. On Thanksgiving, our parents will finally meet for the first time! I’m sure it will all go very smoothly :-). Before I can get to break, I have a massive Physics test—which I should currently be busting my butt studying for. This is the my last Monday of having a Physics lab!! AND ITS MY LAST PHYSICS LAB EVER! PRAISE GOD! 

Gregory and I are as happy as we have ever been; on November 20th we will celebrate our two year anniversary since we started dating. We could spend it sitting at home watching a movie and I would be happy! Though we will be in Pittsburgh, maybe we will go out to a fun restaurant and go out downtown… I even got a new dress for our night out! I’m praying for relatively warm weather..and no snow.. 

Oh man, next three years, and maybe even a lot more than that, I will be living in Steeler country. That MAY be an issue. I’ll work through it, but I don’t know that I have tough enough skin to wear my Ravens gear out in public there- Steelers fan’s are mean 😉 And on top of the Steelers, I think they get alot more snow than I’m used to… 

ALL of those things said, I am still so excited. I get to go to an AWESOME school, with a nationwide known PT program, and be with the love of my life. I’ll consider myself lucky. It’s so nice to officially say that I know what city and state I’ll be in next year. Maybe this will be more permanent than my last four years of homes…

Wow, so it’s b…

Wow, so it’s been a while.

I obviously found myself with little time to blog over the past few months during my fall semester. Between learning my way at my new school, to spending time with Greg, and earning a super great GPA- I didn’t leave much time to even think about writing. That being said, I have missed it. After reading just a few posts that I have written in the past it made me want to start up again.

This semester was filled with anatomy, alot of it. I learned how to really study and retain information, and I managed to get an A in both lab and lecture! Big accomplishment! I finally am truly happy at school, and I’m not embarrassed that it took me two years to find where I really belong. It may not be ideal, but it was sure worth the wait. I was fortunate enough to volunteer at a Montessori Preschool Monday Wednesday and Fridays. I plan on trying to do observation hours to for PT school next semester. Greg and I spent quite a bit of time together, including getting to go to a couple concerts- Luke Bryan was the best to date that I have seen in concert! Over Thanksgiving Greg was in Salisbury for the first part with me and the last part of the break we were in Pittsburgh. We went to the Medallion Ball for his little sisters accomplishments in community service and it was quite the event. Not something I would have wanted to miss out on. (Picture is posted below). Finals week was a struggle but I made it out alive and happy about that….. I have been home for a few days and have yet to bake. Hopefully I will be able to before I leave for Pittsburgh on Friday! I’m so excited to spend Christmas with the Weimers, and so lucky to have the oppurtunity. Everything but the long drive to Pittsburgh in the cold weather sounds like fun. 

Currently watching the Steelers game vs the 49ers, sorry Gregory but I am hoping they lose. The power went out at the stadium again, wtf? But lets hope the red and gold win so that Ravens stay in 1st place!

Hopefully this won’t be the last post for a while, it keeps me occupied and away from studying for the dreaded GRE…

 

Writing from Blacksburg

All settled in, well kind-of, to my new apartment in Maple Ridge! Today has been long…and I’m still awake and so is Greg- almost weird because we barely make it to 12 every other night.

My day started at 520 with a wake up alarm. By 6AM, I was in the car and on my way to Blacksburg. In attempts to beat traffic I left super early and I’d say I was succesful. I made good time at 6 hours and fifteen minutes, with a detour on backroads for the last 40 minutes. When I got here, the key pick up was easy.. then I unpacked 80% of my car waiting for Greg to arrive. He was here about 20 minutes after me and after we unloaded stuff we headed to lunch.. first one of the year at Macadoo’s 🙂 YUM! Mom and Aunt Nancy- we will go here when you guys comein a few weeks— yes you guys are coming. Stop deciding, start planning. (Greg said PLEASE! too). After lunch we ran to Christiansburg to pick up a few more storage things and a desk. We still have a few more things to buy tomorrow but other than that, we have decorating of the room left! It’s looking a little boring right now. Tomorrow we will also make sure I get my Hokie Passport and all the secretorial things done before class next week.  I can’t wait to finally be done all this so we can just relax! As soon as we’re done with me we have to get him situated though so I guess that won’t be for a while…

less than 48 hours

I know I’m not doing very well with keeping up with my blog recently, but I promise I have been busy! For the past week I feel like my mom and I have just been shopping and shopping and more shopping. We got lots of cool necessities for my room at school and I’m so excited to get there and start unpacking everything. I have one last day in Salisbury before I leave bright and early Monday morning to make the 6 and a half hour drive. Greg decided to start packing today…I started last weekend 🙂 Maybe sometimes it would be nicer to be a guy just for the packing aspect! Today was supposed to be my last beach day, but weather was not on our side. I was lazy til around 1130 and we headed to Berlin, had lunch and window shopped but didn’t find anything all too special sadly. The Globe was packed and I wasn’t too impressed with my lunch. However, they have the most amazing Strawberry Vinagrette dressing– I have to attempt to make it sometime. I’m so excited for Monday. I can’t keep it out of my mind! I just want to get all this started. My schedule is awesome, but I am going to have a great deal of work to do.. I’m kinda nervous about all the credits I’m taking. Sorry for the short post, but my Cherry-Cream Cheese Brownies only have a few minutes left so I have to go check on them. Then watching the end of Sisterhood of the traveling pants, 2!

new week!

Sorry it’s been so long since I’ve last posted, I have a bad habit of not updating when I’m busy with Gregory. Last week was pretty busy… Monday I drove to Pittsburgh to spend a few last days of my summer with Greg and his family.  I was actually there before he got home from the airport, it took them a while to get through customs/get their baggage when they finally got back from Italy. So I can’t remember exactly what we did while I was there, but I did get to meet his other set of grandparents on his mom’s side. They are from Atlanta, GA and are very sweet just like his Nana and Pappy! His kind, loving, and big family is one of the things I love about dating him! We went to see Crazy Stupid Love. I’ll just go ahead and say it’s not neccessary to pay money to see it in theaters– it wasn’t that good and wasn’t that funny. I liked Friends with Benefits alot more– just alot of sex. We went to a place called Trax Farms which is like a huge farmers market, with lots of organic stuff and cool packaged things. I got some items to take to school with me. On Thursday, I drove home ot Salisbury and Greg had his first night at the Deloitte leadership conference thing. They took him and like 20 other possible intern’s to a Pirates (baseball) game in downtown Pittsburgh. On Friday, I did 8 more volunteer hours at the PT clinic while Greg was doing the day portion of the Leadership Conf. at Deloitte. I’m so excited for him, I hope this works out in a way that he can get some sort of internship!

Friday after his conference my wonderfulllll dedicated man drove here without even going home to change first! A long seven hours later, he was in Salisbury at 11pm. I had takeout from Tokyo waiting on the table for him, we made Jello pretzel salad for my family gathering Saturday, and went to bed… We are not old enough to go to bed so early haha. Yesterday we didn’t do very much, ran a few errands and went to look at kittens that I won’t end up getting this year :(, and then we went to my uncle’s house for a cookout. Greg got to meet my cousin Travis for the first time, and our entire family got to meet his new fiance. Today my aunt nancy and mom took greg and I to ocean city to just walk the boardwalk and eat lunch. The heat got to us quickly…it got so muggy and gross out! Then two oclock rolled around all too quickly and greg left me 😦 in 8 more sleeps we will be together every single day at Tech and I think it’s going to be the best year of my life! It’s almost been nine months with him and I know that the next nine will be even better…if thats even possible!

Short but sweet!

I’m super exhausted tonight so this won’t be too long…

Yesterday I did some hours at the PT clinic, enjoying it even more this time because it was only me and one other person under the PT’s. It was so fun, helping people and feeling important in the office. I know one day I will be doing something like this, and I will be helping people in one way or another. I got to work with an old friend that I played soccer with in high school, so that made the day go by a little quicker. Last night I pretty much skyped with Greg until he had to go to sleep for early travels to Venice this morning. His trip to Venice marked the 2 more sleeps day!!! So tomorrow around when I get off work, it’s about 24 hours til I get to see his cute face!!! YAY

Today I worked at Denny’s and could not stand most of my customers. You have a few that make your work that day worthwhile, and by a few I mean maybe 2 or 3, if your lucky. Because a majority of the customers tip like s*** and act as though your not supposed to be tipped, when treated properly and professionally. Ridicccc. Anyways, three more days at Denny’s including Tmw. Not much longer..

Uncle Mark and his family came in today. Addie is my three year old little cousin and is adorable. The two boys, Luke and Eli are growing up so quickly! Luke will be taller than me soon… Aunt Lori is a PT, I wanna grow up to be just like her 🙂 Haha! Tonight I baked a little when I came home, because I finally have people around to enjoy my goodies! i’ll post it below!! Have a good Sunday ya’ll!

 

Mini Pineapple Upside Down Cakes

Ingredients

  • 2/3 cup packed brown sugar
  • 1/3 cup butter, melted
  • 2 (20 ounce) cans sliced pineapple
  • 1 (18.25 ounce) package yellow cake mix
  • 3 eggs
  • 1/3 cup vegetable oil
  • 12 maraschino cherries, halved

Directions

  1. In a small bowl, combine the brown sugar and butter; mix well. Spoon into 24 greased muffin cups. Drain pineapple, reserving the juice. Trim pineapple to fit the muffin cups; place one ring in each cup.
  2. In a large mixing bowl, combine the cake mix, eggs, oils and 1-1/4 cups of the reserved pineapple juice; mix well. Spoon over pineapple, filling each cup two-thirds full. Bake at 350 degrees F for 20-25 minutes or until a toothpick comes out clean.
  3. Immediately invert onto wire racks to cool. Place a cherry in the center of each pineapple ring.
I used both a 12 muffin pan or a 24 mini muffin pan for bite size cakes. It all turned out super delicious!
